Chia Coconut Pudding = Puding od chia sjemenki i kokosa

2 žl chia sjemenki
2 dcl vode
2 žl kokosovog brašna
1 žl rastopljenog hladno prešanog kokosovog ulja
1 žl kakaa
sladilo
ekstrakt vanilije
listići kokosa (za dekoraciju)
Chia sjemenke pomiješati s vodom i ostaviti u hladnjaku da nabubre do konzistencije pudinga. najbolje ih je ostaviti da odstoje preko noći, no i pola će sata s povremenim miješanjem biti dovoljno.
Kokosovo brašno usitniti mikserom dok se ne pretvori u kremu (ako imate poteškoća s miksanjem, dodajte malo kokosovog ulja), a zatim dodati nabubrenim chia sjemenkama zajedno s malo sladila i par kapi ekstrakta vanilije. Dobro izmiješati da se svi sastojci sjedine. Gotov puding rasporediti u posudice.
Hladno prešanom kokosovom ulju (preporuča se korištenje nerafiniranog ulja zbog intenzivne arome kokosa) dodati kakao i zasladiti po želji. Preliti preko pudinga, ukrasiti listićima kokosa i uživati u nenadmašno kokosastom okusu.

Chia Coconut Pudding
Summer definetly tastes like coconuts! This coconut chia pudding tastes exactly like a Bounty bar thanks to it's rich dark chocolate topping and will satisfy even the pickiest coconut lover. It is healthy, free of artificial flavours and gluten, sugar and dairy-free as well.
Recipe

2 sp chia seeds
2 dcl water
2 sp coconut flour
1 sp melted cold pressed coconut oil
1 sp cacao powder
sweetener
vanilla extract
coconut flakes (optional)
Mix chia seeds with water and leave covered in fridge overnight, or at least for half an hour, mixing it vigorously from time to time.
Blend coconut flour until creamy and add to chia pudding along with the sweetener and vanilla extract. Mix until combined and transfer into serving bowls or mason jars.
Add raw cacao powder to melted cold pressed coconut oil (it is recommended you use unrefined oil because of it's intense coconut aroma) and sweeten to taste. Pour over the pudding, decorate with coconut flakes and indulge in the unbeatable coconutty flavour.
